SUPER Recipes with Neha Deepak Shah: TOP 3 July

Neha was a MasterChef India Finalist and she is the Co-Founder @meraakikitchen & @whitesage in Jaipur. She is a passionate and creative chef, her range of cooking varies from cuisines from all over the world and is inspired by her travels and culinary exposure.

Eggless Chocolate Chip Cookies πŸͺ

Ingredients

  1. 🌾140g Wheat Flour or Maida
  2. πŸ¦‹110g Butter
  3. πŸ₯„Β½ Tablespoon of Baking Soda
  4. β˜•Β½ Cup of Sugar (mix brown sugar & castor sugar)
  5. πŸ₯„Β½ Tablespoon of Vanilla Extract
  6. 🍫½ Cup of Chocolate Chips
  7. πŸ₯›2 Tablespoon Milk
  8. πŸ§‚1 Pinch Sea Salt

Method

  1. Cream the butter & sugar. Add the vanilla extract,
  2. Mix the flour, baking soda and salt in a bowl,
  3. Add this mix to the previous butter one,
  4. Add the chocolate chips,
  5. Divide the dough into small pieces and flatten slightly on a tray lined with a baking sheet,
  6. Sprinkle some sea salt flakes,
  7. Leave in the freezer for 20 minutes
  8. Bake it in a preheated oven of 180 Celsius Degrees  for about 15 minutes
  9. Serve it hot with vanilla ice-cream

Eggless Choco Lava Cake πŸ«πŸŽ‚

Ingredients

  1. 🌾½ Cup of Maida
  2. πŸ₯„Β½ – 2 Tablespoon of Castor Sugar or Bhura
  3. πŸ₯›ΒΌ Cup of Milk Powder
  4. πŸ§‚1 Pinch Sea Salt
  5. 🍫5 Tablespoon of Cocoa Powder
  6. πŸ₯„ΒΌ Tablespoon of Baking Powder
  7. 🍫130g of Dark Chocolate
  8. πŸ¦‹55g Butter
  9. β˜•Β½ Cup – 1 Tablespoon of Hot Water

Method

  1. Mix the dry ingredients and save them,
  2. Brush the ramekin with butter and dust with cocoa powder,
  3. Mix the hot water, dry ingredients and chocolate butter mix to make a smooth batter ➀ the batter should be dropping consistency and not very liquid, slightly thicker than the idli batter ➀ pour a little above ½ of the height of the ramekin,
  4. Bake in a preheated oven in the middle rack with top and bottom heating on ➀ 220 Celsius Degrees for 10 to 12 minutes ➀ it should be jiggly in the centre but dry on top,
  5. Cool for about 5 minutes and then unmold on a plate, be patience otherwise you will bursting it,
  6. Be very attentive, if you over bake it, you won’t have the lava oozing.

Mac & Cheese πŸœπŸ§€

Ingredients

  1. 🍜150g of Macaroni or pasta of your choice
  2. πŸ¦‹2 Tablespoon of Butter
  3. 🌾1 Tablespoon of refined Flour or Whole Wheat Flour
  4. πŸ₯„2 to 3 Tablespoon of Fresh Cream (optional)
  5. πŸ₯›1 Cup of Milk
  6. πŸ§€β…“ Cup of processed Cheese
  7. πŸ§€ΒΌ Cup of Mozzarella Cheese
  8. πŸ§‚Salt & Pepper
  9. 🍞¼ Cup of Bread Crumbs
  10. πŸ§€2 Tablespoon of Parmesan of Cheese or Regular Cheese
  11. 🌢Chili Flakes, parsley for garnish

Method

  1. Boil the pasta with a little salt and a tablespoon of Oil. Oil prevents the pasta from sticking to each other. When done, drain it out and wash it with cold water to remove all the excess starch,
  2. Heat the butter in a pan, once it melts add the flour to it. Cook the flour for just 1 minutes and add the milk. Mix continuously to make sure that there are no lumps. You can use a whisk to do so. The milk will start thickening.
  3. Once the milk has thickened, add the β…“ cup of the processed cheese to it and cook it so that it melts well. Add the cream too. Add the boiled pasta or macaroni to the sauce, season with salt and pepper. At this stage you can add chilli flakes or smoked paprika to make it spicy.
  4. Remove it from the flame and add the mozzarella cheese to it.
  5. Now transfer the mac and cheese into any baking dish.
  6. Mix some bread crumbs with parmesan cheese and top it up on the macaroni mixture.
  7. Bake it in the oven for about 5 to 7 minutes on high. Garnish with parsley, chilli flakes and SUPER, IT IS DONE!
